These are not all of them, but these certainly are at the very top of my list:
Subscribe to Comments - EVERYONE should have this one.
Batch Categories - Add, remove and modify Categories and Tags in large batches.
Add to Any - Let people share your post via every method imaginable.
Theme Tester - Play with your site's look without letting visitors see the work-in-progress.

I have three groups of plugins that I always use. The first set are not necessarily essential, but if you're interested in having good SEO and Analytics, I highly recommend these plugins:

- All in One SEO
- Feedburner Feedsmith
- Feedstats for Wordpress
- Google Integration Toolkit (Analytics & Webmaster tools)
- Google XML Sitemaps
- StatPress Reloaded
- WordPress Google Analytics Reports (no more needing to go to the analytics page)

The next group are Social Networking plugins that allow you and your visitors to spread the word via popular social networks:

- Sociable
- Twitter Tools
- Wordbook (this can be buggy)
- CommentLuv

The last set of plugins fall into the Security, Performance & Navigation category:

- Secure Wordpress
- WP-PageNavi
- WP SuperCache

I like WP-Forum because I wanted forums on my site. I also use Logic Lockdown for added security. Thanks for making this list--I'll have to check the others out.
